They do a waterfowl 101 course every year at San J in October and they usually also put on a land navigation course once a year by Anza. But you're right, pretty much everything for SoCal is done at Compton Hunt Club.
Not specific to quail/turkey but focusing on areas that have burned in the last 10 years is generally a good start if your looking for areas that aren't completely choked up with chaparral. If your using ONX there's a map layer that shows historical burn areas.

I got one two years ago around Niland. It had been banded two months earlier and less than mile away. I was hoping for a cooler story but it my first (and only) banded anything so I'll take it.
